Save Our Souls Pinot Noir 2013

Pinot Noir was sourced from 3 separate vineyards on the Mornington Peninsula including Red Hill and Balnarring.
The fruit was hand-harvested, sorted and fully de-stemmed. There was an initial chilling of the must before fermentation was allowed to commence under its own steam with no yeast additions. No further temperature control was initiated. Minimal handling was employed with limited pumping of the juice and no punching down of the cap.
Following fermentation the wine was transferred to seasoned oak barriques for 12 months. There was no fining and only a course filtration prior to bottling.
Aromas of lifted raspberry, redcurrant and cranberry fruit float across underlying earth and spice notes.
The palate is fine and delicate but still well defined and structured. More cranberry and redcurrant characters are on show here too. There is some gentle oak influence adding tannin and complexity. The wine will benefit from up to 5 years bottle maturation.
