Save Our Souls Sauvignon 2014

The fruit for this wine comes from Lusatia Park vineyard in upper Yarra Valley.

The vines are 25 years old and planted on deep red volcanic soil. The fruit was hand harvested and then whole bunch pressed by Howard (our 30 year old screw press) until no more juice could be extracted. The free-run and pressings were combined and no additions made. After 24hrs settling the juice was racked to 15 year old hogsheads for fermentation. No cultured yeast was added and malolactic fermentation was allowed to occur naturally.

The wine was bottled without fining or filtration after 6 months.


Aromas of pear, quince, bergamot and kaffir lime.

There are some subtle underlying herbal notes that add complexity with causing distraction. The palate is flinty, mineral and tight but with plenty of texture and weight. It is also quite tannic which gives balance, length and definition.

A wine that will benefit from at least 5 years cellaring.
