Save Our Souls Pinot Noir 2019
Alc/vol. 13.1% 3000 DOZ
MV6 Clone from Bittern
Light on its feet the 2019 shows a perfumed nose with hints of freshly cut sage. Good healthy fruit was harvested from one single, abundant, vineyard on the Hastings Tuerong border. The growing season was marked by good flowering and even temperatures throughout the summer. A late heat spike brought yet another early start to harvest.
95% of the grapes were de-stemmed, with 5% whole bunches, and tipped into open fermenters. The must was pumped over daily, during primary fermentation, leading to a light and bright pallet of fresh berries.
After two weeks, the wines were pressed off their skins, into one tank to finish the ferment and go completely dry. This was followed by natural malolactic conversion and then a small sulphur addition. 8 months following harvest the wine was bottled after a light filter and final small sulphur addition.
A bright fresh wine exuding fruit with plenty of fresh acidity to keep the berries lingering.
Typical bright crimson colour and a fragrant aroma of red berries and spice speak clearly of the Mornington Peninsula.
Punchy or lifted fruit characters on the palate that suggest raspberry and cherry lead through to a softening mid-palate with great texture.
A tight structured wine that is slowly unravelling. The length once again provides evidence of the origin with lingering elements of darker red fruits.
