Save Our Souls Sangiovese 2015
The wine was fully de-stemmed and a 15% saignee was taken from each fermenter.
It was initially chilled then pumped over daily during fermentation in open stainless steel tank. The wine was allowed a full 30 days maceration on skins with no addition of sulphur dioxide or tartaric acid. After this it was aged for 15 months in seasoned French oak barriques.
The wine shows aromas of violets and black fruits including black cherry, black currant and blackberry as well as subtle rose petal and earth.
The palate is savoury and firmly structured with primary fruit notes coming to the fore.
The finish is long well supported by the chewy tannin structure.
